DIET CHOCOLATE MOUSSE MONTIGNAC
This is a wonderful dessert, and although it follows the Montignac diet rules, you can take for free diet, and they liked it bigger
For 6 / 8 persons:
Ingredients 400 g of chocolate "black" bitter with 70% cocoa
8 eggs half a glass of rum (7 cl)
1 orange 4 teaspoons instant coffee decaf or
1 pinch of salt if you like Saccharin

Cut the chocolate into pieces and place in the pot. Prepare
half cup of strong coffee and pour into the pan, along with rum.
Put the saucepan on the fire, or water bath.
Melt chocolate. stir well to bind it.
If too thick, add a little water. Once the chocolate is perfectly cast in a very creamy double cream, remove the pan from the heat source.
As it melts the chocolate, grated orange peel (use only the surface of the skin of the orange). Browse
half the orange peel into the pan, and stir.
Break the eggs and put yolks in a bowl and whites in another. Beat the egg whites until stiff (after having taken a pinch of salt) until they are actually very consistent.
Pour the chocolate in the first bowl with the yolks. and saccharine if you want sweeter
Stir until very smooth cream.
Then pour the cream over the egg whites and mix with spatula until mixture is perfectly homogeneous. Check
particles are not clear and there is no free chocolate mix in the bottom of the container.
can leave the mousse into the bowl, after cleaned up the edges, or pour into a drink
pmcuencos individual, or other recipient.
Before putting it in the fridge, sprinkle the surface of the mousse with the remaining orange zest.
Prepare the mousse for at least six hours before serving.
Ideally it last night.
